Snow Ball Cookies

1 Cup chopped pecans

1 Cup AP flour

1/4 pound butter

1 tsp vanilla

2 TBS granulated sugar

&

2 lbs Icing or powder sugar for coating.

Cream butter and granulated sugar. Add vanilla and mix in flour and pecans to make a stiff dough. roll in to small marble sized cookies balls and place on a parchment lined cookie sheet. Bake at 325 for 25 minutes. (Be warned these DO NOT brown or spread in the making) Immediately after removing from the oven..gently dump into a flat bottomed bin or bowl, filled with icing sugar. Shake gently, coating all the cookies in icing sugar. continue to shake every few minutes as they cool until they are buried in the icing sugar. Allow to cool. Remove and pack into an airtight container.
