Green Tomato Salsa

Green Tomato Salsa

  • 16 cups diced green tomato
  • 8 Cups Diced yellow onion
  • 1 Cup Diced jalapeno peppers ¬†( or hot peppers of choice)
  • 4 Cups diced sweet red, yellow and orange peppers
  • 4 Cups frozen ¬†sweet corn
  • 3 Cups chopped fresh cilantro
  • 1-2 to 3/4 cup minced garlic
  • 2 Cups Lime juice
  • 1 Cup cider vinegar
  • 1 TBS chopped fresh oregano
  • 2 TBS sugar
  • 3 TBS pickling salt
  • 2 tsp ground black pepper

Combine ingredients into a large stock pot on Medium. Bring to a simmer and simmer 30-40 minutes. Ladle hot salsa into hot sterile jars. Screw on clean lids and rings and process in a boil bath canner ( boiling water must be 1-2 inches above the filled jars) 10 minutes for pints 20 for quarts. I Like to use it with sour cream and grated sharp cheese for nachos!
