Green Tomato Relish


  • 2 Cups diced green tomato
  • 3/4 Cup Diced red and green peppers
  • 1 Cup diced onion
  • 1 Cup diced celery
  • 1/2┬áCup cider vinegar
  • 1 Cup Organic cane sugar
  • 1&1/2 tsp celery seed
  • 1/2 tsp dry mustard
  • 1/4 tsp black pepper

Put all diced vegetables in a bowl and toss with 1/4 cup coarse pickling salt. Allow to stand in fridge 4-8 hours.  Drain and rinse thoroughly.

Bring vinegar, sugar and seasonings to a boil. Drop in vegetables and bring to a boil. Turn down and simmer for 15-30 minutes. Ladle into hot sterile 1/2 pint jars and process in a boil bath canner for 10 minutes.

  1. Hi Bev, just finished a batch of this and it turned out good, I am going to adjust the vinegar and the celery seed. Thanks for all the help and recipes, I am a new canner and I cannot believe I can do all this stuff:)

  2. This relish is fantastic! I have made two double batches already and it is going so fast that I just wish I had more green tomatoes. Way better than anything you could buy in a store.
