- 3&3/4 Cups prepared and mashed strawberries
- 7 Cups sugar
- 1/4 Cup lemon juice
- 1/2 tsp butter (optional)
For Double Fruit Jam!
Use same amount of sugar but double the fuit and pectin! Prepare the same way!
In a heavy bottom sauce pan. place strawberries, lemon juice and sugar. Bring to a boil , stirring constantly. When all sugar is dissolved, remove from heat and stir in butter and liquid pectin. Continue to stir for 1-7 minutes. The butter is to reduce foaming.
Pour hot jam into hot sterile jars. Wipe the rims and threads of jars with a clean damp cloth. Place on lids and screw down to fingertip tight. Place in a water bath canner making sure water is 1-2 inches above the lids. Bring to a boil and process in boiling water for 10 minutes. Removes from canner onto a folded dry towel and allow to stand until cooled and set!
Then HIDE THEM IN THE PANTRY!!
