Cooked Strawberry Jam With Double Fruit Alternative!

  • 3&3/4 Cups prepared and mashed strawberries
  • 7 Cups sugar
  • 1/4 Cup lemon juice
  • 1/2 tsp butter (optional)

For Double Fruit Jam!

Use same amount of sugar but double the fuit and pectin! Prepare the same way!

In a heavy bottom sauce pan. place strawberries, lemon juice and sugar. Bring to a boil , stirring constantly. When all sugar is dissolved, remove from heat and stir in butter and liquid pectin. Continue to stir for 1-7 minutes. The butter is to reduce foaming.

Pour hot jam into hot sterile jars. Wipe the rims and threads of jars with a clean damp cloth. Place on lids and screw down to fingertip tight.  Place in a water bath canner making sure water is 1-2 inches above the lids. Bring to a boil and process in boiling water for 10 minutes. Removes from canner onto a folded dry towel and allow to stand until cooled and set!

  1. I’m looking forward to making my first batch of jam ever and I’m not sure how much pectin should be added. I am making my own, thanks to your video on homemade pectin but NO idea about quantities to add…
What amounts do you usually use if liquid and how much if powdered? Asking about both forms, in case another novice is wondering…
Thanks, Mrs V. I LOVE all you do!
